Introduction
Cork Crimson Gin is the new super premium gin in our portfolio launched in late 2005. It’s exceptionally refined and elegant flavour makes it ideal for gin martinis and cocktails. Only the most expensive and rare ingredients are used in its creation. In naming Cork Crimson Gin we took inspiration from the crimson coloured wax seal of the Watercourse Distillery.
History
There is a long and distinguished history of gin distilling in Cork city dating back to the l700’s. Here the distillers had access to the finest ingredients: plump grain from the fields of East Cork and exotic botanicals arriving at Cork’s bustling international port. It was at the Watercourse Distillery that the recipe for Cork Dry Gin was first documented in l798 by apprentice distiller William Caldwell.
Caldwell’s leather bound note book contained a magical array of recipes, yet one stood out as the ‘Best Gin’. This recipe was different to others as it used only the rarest and most expensive ingredients.
Inspired by Caldwell’s original recipe, Dillon Bass have painstakingly recreated this distinctively subtle and elegant gin in Cork Crimson Gin. Ten different botanicals from around the world are used, including Juniper Berries from Tuscany, Sweet Orange Peel from Morocco and Cassia from Indonesia along with Bay Leaves from the West Indies and indigenous Garden Mint. An antique copper gin still from the long closed Green Distillery in Cork City, has been restored and, as it would have been done in 1798, the delicate spirit is then hand-crafted by the Master Distiller in small batches.

Due to the expensive and exotic ingredients used in its creation, Cork Crimson Gin is best consumed in the classic gin martini and gin cocktails.
